The first step of baking Christmas cakes is making any other dish. We required proper ingredients. So first we will see what are the ingredients we need for making this special cake. - 1 cup dry raisins
- 2 cup raisins
- 1 fresh cherries
- 2 cups whole dates, and it should be cut half
- 1-ounce small gumdrop, no liqueur
- 1 ¼ cup finely chopped walnuts
- 1 teaspoon cloves
- 1 teaspoon cinnamon
- 2 teaspoons all spices(garam masala)
- 1 full cup apple jelly
- ¼ cup brandy
- 7 eggs
- 3 cup of sugar (white sugar)
- 5 cup of refined flour
- 1 ¼ cup butter
- 1 teaspoon vanilla extract (for giving the vanilla flavor)
- 1 teaspoon baking soda
- 2 cups boiling water
So now, we will see the procedure. The procedure is very simple and quick. You can bake it on New Year also, as your happy new year cake.
First, steam the dry and normal raisins in boiling water for 5 minutes. After that, drain out the water, and add all the spices, cherries, all the dry and normal raisins, apple jelly, cherries, gumdrop, date, and last but not the least brandy. After mixing all these things, give all these things a good stir, and blend it. After blend, let it rest overnight.
Now, the next day, before starting to make it better, first set the oven at 135 degrees for preheating.
Now take a large mixing ball, add butter and sugar, and whisk it, till it becomes light and fluffy. You can use a beater also. Now add eggs one by one, and mix them also. Add the vanilla extract drops in it.
After mixing all these things, now it’s time to add refined flour and baking soda in the batter. Mix it all together, and make it a proper cake batter.
Now, the last step of better mixing. You have to add the flour mixture into the fruit mixture that we prepared last night. Basically, use a cut and fold the mixture. So the cake will become fluffy.
Now, pour the mixture into a grease baking mold, and sprinkle the chopped walnuts. Mold size should be in 8×8×3 inch mold. If you have butter paper, then use it also. Now, pour the batter, and take it into the oven for 3 to 3 and a half hours. After 3 hours, check it once. You can use a toothpick or knife. If the toothpick or knife comes clean, it means the cake is completely baked. Now let it be completely cool down, after that demold it.
